When Judy and I stumbled onto bacon peanut brittle during our cocktail-fueled wanderings last Saturday, we had no idea that it would spark such an obsession.
Infatuated with the bacon vision (and blessed with the ample free time of a third year law student), Judy set out immediately to make the perfect brittle: glossy, crunchy slabs of caramel, nuts and salty bacon.
John awoke the next morning to a house full of bacon, and Judy crouched with a candy thermometer over a pot of bubbling brittle. Before the hangover even subsided, Judy had achieved bacon nirvana – the perfect balance of sweet, salty, smoky goodness.
One bite and I was hooked. I mean really, what isn’t better with bacon?
