The perfect detox to a weekend of decadence, a simple salad of greens, smoked trout, chopped tomato and sweet pepper beckons.
Ingredients:
For the Salad:
- 1 lb. baby romaine or other greens
- 1 lb. smoked trout, torn into pieces
- 1 sweet pepper, diced
- 1 ripe tomato, diced
- a bunch of scallions, white parts sliced
- avocado, diced (optional)
For the Dressing:
- 3 T mayonnaise
- 3 T sour cream
- 1/2 cup buttermilk
- Chopped bunch of tarragon leaves
- 1 tsp. garlic powder
- 1 tsp. onion powder
- salt and pepper to taste
- Hot Spanish Paprika (optional)
Directions:
1. Put the salad greens, trout, sweet pepper, tomato, scallions, and avocado (if using) in a bowl and toss together.
2. In a separate bowl, whisk together the dressing ingredients.
3. Serve the salad in bowls and dress with the creamy tarragon dressing. Enjoy!
This sounds like such a good detox dinner! I always forget about smoked trout - love this.

Good point! We've also done this with a spicy vinaigrette, which is a little lighter, but just as good. :) We used an old vinegar based spicy barbecue sauce that Dave had made and turned it into a dressing for the trout salad.

What does into the Dave's vinegar based BBQ sauce? We in eastern NC love vinegar based anything:) Would his sauce go well with pulled pork?

We had made it precisely for pulled pork....while in North Carolina. ;)
Spicy Barbecue Vinegar sauce:
Combine 1 cup cider vinegar, 1/4 cup water, 1 tablespoon brown sugar, 1/2 teaspoon cayenne pepper, 1/4 teaspoon black pepper, and 1/4 teaspoon of red pepper flakes. I remember he had warmed up the apple cider vinegar and the brown sugar to let the sugar melt.
To make it into a dressing, just add oil and whisk.
